Gentle whole cluster pressing of the grapes ensures the capture of delicate fruit flavors and aromas. After the primary yeast fermentation, a portion of the wines undergo a secondary malolactic fermentation, which adds a layer of buttery flavor sensation. Extended aging in the bottle during tirage contributes to the final layer of flavor complexity, and adds roundness, creaminess, and nuttiness to the palate.
